Dubbo might seem like an unlikely star in the middle of New South Wales, but this gutsy country city is a genuine surprise packet. It’s best known for the Western Plains Cultural Centre and the magnificent Taronga Western Plains Zoo, which lets you see rhinos, giraffes and lions roaming on open-range plains. But Dubbo also has a proud Wiradjuri heritage, a lively café scene and a sunburnt charm that grows on you.

Give Dubbo two full days to do it justice. Day one: tackle the zoo (it takes 3–4 hours by bike or car) and the cultural centre. Day two: explore the gaol and Dundullimal, then grab a flat white at one of the Church Street cafés. A third day lets you relax into the regional pace and explore the river trails.
