To do justice to NSW, plan at least 10–14 days. Spend 4–5 days in Sydney, then head to the Blue Mountains for 2 days, followed by a self-drive up the coast to Byron Bay (3–4 days) or down the South Coast to Jervis Bay (3 days). Wine lovers should add 2 days in the Hunter Valley. If you’re short on time, a week can cover Sydney and a day-trip to the Blue Mountains or the Central Coast, but you’ll be moving fast.
