To really explore the New Territories, plan at least two to three days. Dedicate one day to the Sai Kung peninsula (combine a morning hike with a seafood lunch) and another to the heritage trail and walled villages in the northwest. A third day could be used for Tai Mo Shan or a side trip to Cheung Chau. If you're short on time, a full-day minibus tour that hits Ping Shan, Kam Tin, and a quick stop at the Wetland Park can give a solid taste.
