Jervis Bay, on the New South Wales south coast, is famous for its impossibly white sand beaches and crystal-clear turquoise waters, often claimed to have the whitest sand in the world. This protected marine park is a haven for wildlife, including resident dolphins and, from May to November, migrating humpback whales. The laid-back villages of Huskisson and Vincentia offer excellent cafes and a gateway to the pristine beaches and bushwalking trails of Booderee National Park.

Spend day one exploring Hyams Beach and the Booderee National Park walking trails, day two on a dolphin cruise and kayaking in the bay, and a third day relaxing at a quieter beach like Callala or Currarong. If you're on a self-drive itinerary, Jervis Bay works perfectly as a two-night stop between Sydney and the South Coast.
