Plan at least a full day to do the Limestone Coast justice. Start with a morning hike along the Bouddi Coastal Walk (allow 3–4 hours for the full 8.5 km one-way), then spend the afternoon exploring Cathedral Rocks and Norah Head. If you're a keen surfer, add an extra half-day to catch waves at Putty Beach or the more challenging reef breaks at The Entrance. The area is easily done as a day trip from the Hunter Valley vineyards, but staying overnight in a cozy coastal cottage lets you experience the dramatic sunsets and early-morning solitude.
