Moruya is a perfect stop for one or two nights. If you're driving the Princes Highway, an afternoon is enough to explore the main street, grab a coffee and dip your toes in the river. For a deeper experience, stay two days: spend the first day on the river and at the markets (if it's Saturday), and the second day visiting the botanic garden and taking a short drive to the nearby beaches or the historic village of Central Tilba. The town is compact and walkable, so you can easily park the car and wander.
