Two days is ideal to experience the area's contrasts. Day one: explore Tai Hang and Victoria Park in the morning, then hike the Dragon's Back in the afternoon (start by 2pm to catch sunset from the peak). Day two: visit Shek O for a lazy beach morning, then head to Shau Kei Wan for lunch and the Coastal Defence Museum. If you only have one day, combine the Dragon's Back hike with a Shek O beach stop and a quick wander through Tai Hang in the evening.
